HELD JULY 08, 2008
The Avon Town Council acting as the Local Liquor Licensing Authority for the Town of Avon,
Colorado convened at 5:20 PM at the Avon Municipal Building, 400 Benchmark Road, Avon,
Colorado. A roll call was taken and Board members of the Authority present were Ron Wolfe as
Chairperson, and Board members Rich Carroll, Dave Dantas, Kristi Ferraro, Amy Phillips, Brian
Sipes, and Tamra Underwood.
PUBLIC HEARING ON NEW HOTEL AND RESTAURANT LIQUOR LICENSE
a. Applicant: East West Resort, LLC & Riverfront Village Restaurant, LLC d/b/a Westin
Riverfront Resort & Spa
Address: 330 Riverfront Lane, Avon, CO
Manager: Robert Trotter
The Town Attorney noted that the application materials were in order. Jon Stonbraker, Dill Dill
Stonbraker, Carr Stonebraker & Hutchings, PD, presented the application on behalf of the joint
licensees. Chairman Wolfe opened the public hearing and Drew Dodd and Mike Brown, both
Avon residents & business managers, made comments in support of the application. Sue Duffy,
Schwall Liquor Licensing Professionals, presented the required survey on behalf of the
establishment. She noted that all signatures were in favor of the liquor license. Robert Trotter,
General Manager of the Westin Riverfront Resort and Spa, provided a brief overview of the
amenities. Thomas Salamonich, manager of the restaurant, passed out some menus and
spoke about the application as a joint license. He described the food and beverage venue and
how it would work throughout the hotel. Board Member Underwood requested that the
declaration for the property be submitted to the Town Clerk & reviewed and then kept as a
record in the file. Chairman Wolfe closed the public hearing.
Board member Phillips moved to approve the liquor license for East West Resort, LLC &
Riverfront Village Restaurant, LLC d/b/a Westin Riverfront Resort & Spa along with Resolution
08-03 which included the licensing of the Westin Riverfront Resort and Spa for a hotel and
restaurant liquor license and to designate the property as a resort complex". Board member
Sipes seconded the motion and it passed unanimously by those present.
There being no further business to come before the Board, the meeting adjourned at 6:00 PM
